It's states it will support one 4K monitor and a 2nd up to 2048x1152, but will it support (2) two 2560x1440p monitors?
No, the USB-C to Dual HDMI Multi-Monitor Adapter will not support (2) QHD or WQHD resolution. The 4K HDMI port will support up to 3840 x 2160 and the non-4K HDMI port, only up to 2048 x 1152.

When connecting my Windows laptop to 2 screens, 1 screen is 1920 x 1080 and the 2nd screen is 32” curved QHD 2560 x 1440p. Will this hdmi splitter extend between these 2 monitors? So not mirror but I need it to extend, instead.
Yes, the USB-C to Dual HDMI Multi-Monitor Adapter supports extended mode on Windows laptops . This means your two monitors can display different content rather than mirroring.
