VG-MAX STEEL CORE: Every knife has a core of Shun's proprietary VG-MAX stainless steel clad in 68 layers of stainless Damascus, 34 per side, which support the core and add stain resistance.
16 DEGREE EDGES, HAMMERED FINISH: Double-bevel edges hand-sharpened to 16 degrees per side, with wide serrations on the bread knife. The hammered tsuchime finish helps food release.
WALNUT PAKKAWOOD HANDLES: Contoured walnut PakkaWood, a resin-impregnated hardwood that resists moisture, with an embossed end cap with brass trim for balance.
11-SLOT BAMBOO BLOCK: Four open slots, including one for kitchen shears, leave room to grow. Knives handcrafted in Japan; honing steel and block made in China. Hand wash knives; not dishwasher safe.
