“Why does installation not include the rear camera on Nextbase - 320 XR Front and Rear Dash Cam with 32GB micro SD card. When I looked up installation said not with rear camera installed. I would like to know if rear camera can be installed.”

Not sure of the question, but the rear camera is simply mounted with adhesive, the only challenge is running the wire to the front camera to power / connect it.
