“The height of this appliance with hinge is 70+ inches. Without, it's 68.75. I have shallow cabinets over my fridge at 69 inches. If the 70+ height is on the front, this will fit. If there is additional height in the back, it won't. Can someone check?”

The extra height is in the front. It is about 1.5" high and maybe 3" from front to back.

The 70 inch height is in the front only. It should fit just fine for your situation.
