So these amiibo of Plague, Spectre, and King Knights unlock fairies that follow Shovel Knight around. They're pretty cool looking actually and have a lot of fun animations. If you use them for their respective characters then special armor is unlocked. It's like the difference between Mega Man X's normal blue form and when he gets a suit like the Full Armor X look from the original. I didn't use these long (they look spiffy enough) but I don't believe they offer anything more than a cosmetic change. NO MORE SPOILERS The amiibo themselves look good but have soft sculpts. There's not as much detailed paintwork as other amiibo (especially not any of the Smash Brothers amiibo). So they look good from afar haha!
