So I ended up looking at best buy and found this. It works fine, it serves its purpose.

I am able to configure the monitors as two separate extensions of my laptop desktop for a total of three screens, and I was also able to mirror my laptop display on one monitor and extend the desktop to another, allowing me to close and relocate the laptop out of the way. No hardware setup was required, but I did heed the warning to not have any displays connected to the splitter when I first connected this to my computer. It seems a little bit expensive, but other products in this category are also more expensive than they probably ought to be. As long as we keep buying them, prices will probably stay up.

Once we found the right USB port to put it in (directly on the laptop, not the hub), we were good to set up for extension and not mirror.

Best Buy employee approached me to ask if I needed assistance - she took me right to the location of the adapters and helped me with the selection. Staff was excellent in their assistance.
