And the back of the remote is ROUNDED, so it "ROLLS" in my hand and slides around making it difficult to use...other than that it's a decent TV.

I'm sorry to hear that you are having issues with your image settings not saving on your TU7000 TV. I have a few troubleshooting steps that may help resolve your issue.
First, let's ensure your Firmware is up to date. Go to Settings> Support> Software Update.
Next, there are a few Settings that may be turned on, which are causing your Picture Settings to change or reset.
1) Retail Mode. Go to Settings> General> System Manager> Usage Mode> Enter Pin 0000> Change to Home Mode.
2) Intelligent Mode. Go to Settings> General> System Manager> Intelligent Mode> Off
Finally, if the issue remains, I recommend resetting your Smart Hub. Go to: Settings > Support > Device Care > Self Diagnosis > Reset Smart Hub.
