Currently my iPod shows that I have 3526 songs with 94.74 GB Still available of 128GB capacity. So about 34 GB of storage is being used right now A small amount of the used capacity might be video but maybe 200 or 300 MB, the OS and pre-installed apps also probably take up a few GB. I use the iPod in a similar fashion to what you describe, no Apps or games no streaming, just local downloaded music files. It looks like it should hold maybe 14000 songs by my rough estimate, assuming I don't start using games, apps or video files that begin taking up a lot of storage space.
