• Next to the next to the AppleCare there should be a button that says remove just go ahead and click it

• I would cancel when you pick the item up or receive the watch itself. If you do cancel it it may postpone you getting the watch. Although I would highly recommend having apple care, the likely hood of damaging your device is pretty high.
