I believe it starts right away. If it’s still not showing up though then call Apple support. I’ve always had a great experience with their customer service.

It shows up when you activate the watch, log in the Apple app and you see the beginning and expiration date.

To my knowledge, AppleCare never shows up in subscriptions. I’ve purchased many many AppleCare’s over the years, for me, they were never shown in my subscriptions. I received an email with each AppleCare detailing the coverage. Hope this helps!
