“Would this be compatible with a MacBook Pro? Either a 2018 MBP 13" with touchbar and/or 2019 MBP 16"? Anything not included that I should keep in mind that I might need for the set up?”

It is compatible but you will need a thunderbolt 3 to display port or thunderbolt 3 to HDMI adapter for it to work. I'm running two of them on a MBP 16 using a thunderbolt 3 to dual DP and they work great.
