“Will this adapter work for a Chrombook ? And if it will, can I also use an extra ethernet adapter with 2 usb ports to connect to it? I need it for work, so I have to use an ethernet connection plus a full size screen. Or any recommendations?”

Hi. It should work with your Chromebook as long as it supports USB-C. But, it will not work with your Ethernet setup since the adapter does not support this.
