Not 100% sure. But, as long as the Sound system will recognize them as two different devices it would be able to. Thing is you're only going to have the driver installed once, so will macOS allow two different processes to capture using the same driver?

But, is that really necessary since the two people are going to be at close enough to be by the same Macbook Pro? One of the four patterns is figure 8, which opens up the capture patter to both front and back. But, cuts out the sides of unidirectional.

No you can only use one output at a time. However there are features the microphone has that can mimic what you desire

I tried hooking up a headset w/mic and this and had no problems. 
But really, you can use this one mic to record both people at the same time, if they are in the same room. Max distance is about 10-12ft form the mic. The adjustable gain works great if the room is pretty quiet.

The microphone has a bidirectional mode that would pick up both people if you are sitting on either side of the mic while cancelling the sounds to the sides.
