“If I plug in the ANC cable, does that shut off Bluetooth? And does the Bluetooth remain off with noise canceling on? I just want a Bluetooth OFF option.”

Plugging in the backup audio cable will disable Bluetooth, and noise cancellation will auto-default to the highest setting.
