Thank you so much for taking the time to reach out to us and for your interest in this great cooktop. We're happy to help with this! This cooktop maintains a temperature of approx. 140 degrees Fahrenheit while simmering. It does not cycle on and off like an electric cooktop burner does. It instead uses the inner ring of the multi-ring burner to provide a low flame. We hope this helps!
