I don't use the app,just the buttons on the machine.Easy peasy.

The app doesn't actually control the machine, it only can change settings.

Yes, this machine works the same without using Wi-Fi at all as it does using it. Notice in the picture it has all the controls needed on the top.

Yes, the app is optional and does not inhibit the use at all. I could not figure out the app for the first a few weeks due to not entering the correct code and the espresso maker worked great.
