• Yes will work no problem. Remote is either Bluetooth or a RF version so no line of sight is needed to control app space has HDMI CES control so may be a lie to control your 5.1 with voice remote

• Yes. You certainly can connect Chromecast with Google TV to the HDMI port on your receiver and get Dolby Digital 5.1 surround sound. But, you will have to enable the CEC features on both your TV and receiver box, and manually select the speaker output on the settings menu for your Chromecast device.
