“Is it possible to connect both of my MSI - Optix 27" LED Curved QHD FreeSync Monitors to this? Or will it over load my the system and then fry the pc?”

I am running two 27 inch monitors. not sure why you think it would fry the system

You should be able to set up dual monitors for this system, however, you need to make sure the display cables are plugged into the graphics card on the back of the PC.
