“Will the receiver play through Dolby Surround and other surround modes when you connect a CD player or record player with RCA cables? I have an older Denon that won't let you use the surround sound modes unless you have a 'digital connector'.”

No, since the connection is by definition stereo it will not allow you to process it as surround sound (Dolby or DTS). However there is a multichannel stereo option which will produce sound from all speakers attached.
