“I will use 3 hdmi inputs which I expect to output to either my plasma TV or overhead projector. The overhead is 1080p and the plasma is 768p. I was told that the video signal will revert to the lowest of the 2 (768p). Is this true? Is there a workaround?”

Yes, this is true, to get the 1080p you would have to upgrade to a newer TV which at the current cost of TVs isn't bad for a better viewing experience.

In situations when the Plasma is for day time viewing and the projector for night time or movie time watching, the receiver will output the higher output.

I was amazed because I have never seen or heard this before. You can play around with the setting to tweak the output on the receiver. There is a ton of settings that I have finally finished and have my setup complete after 2 weeks of tinkering. Good luck. You won't be disappointed in this receiver.
