Hi Claribel - Thanks for choosing GE! You can certainly bake in your new gas range. The numbers (200-500) on the Oven Temp knob represent Bake temperatures. Turn the Oven Temp knob to select the desired bake temperature or turn to Broil when broiling is desired. See pages 10 and 12 of the Use and Care Manual: https://products.geappliances.com/MarketingObjectRetrieval/Dispatcher?RequestType=PDF&Name=49-2000315-1.pdf - Also, when the model is manufactured, these extra letters/numbers are placed on the appliance rating plate and product registration card. These letters/numbers are used to identify manufacturing specific data when the appliance is made. Should service or parts be needed, these are used as identifiers for the specific appliance.
