“In lieu of 18" depth for receptacle in the cabinet, can a 2" recessed receptacle be used allowing us to reduce the depth to 16" in the enclosure with trim kit? Thank you!”

Yes. I don't know where your 18 inches came from : This shallow microwave is only about 13.5 inches front to back, including the plug, which I have plugged into a standard receptacle on the wall at the back of the cabinet. I am NOT using the "trim kit" so cannot comment on that, but this thing fits my 13 inch deep cabinet shelf and only sticks out a half inch.
