I called Insignia Customer Support and asked the same thing. The instructions are wrong. The instructions say to push the temp button up or down to adjust the temp, but the agent told me that I had to unlock it to change the temperature. When you close the door, after 30 seconds you hear a bell, tinkling kind of sound and the system goes into lock mode and the temp light goes off. Then to adjust the temp you have to hold the button down to unlock it. Like I said, the book is wrong. It always goes into lockdown mode.
