Thank you for your inquiry! The Insignia™ HDMI Audio Extractor with 4K @ 60Hz / HDR Support (Model: NS-HZ340) does not convert 5.1 LPCM audio to Dolby Digital. While it supports audio extraction from HDMI and allows output via 3.5mm analog or optical (SPDIF), it only passes through the audio format it receives and does not perform any audio format conversion. This means that if your Nintendo Switch outputs LPCM 5.1, and your TV or soundbar only supports LPCM 2.0 or Dolby Digital, this extractor will not convert the signal to a compatible format.
