“Hi! How much time would an appointment for battery change take? Is it possible to do it even when the battery condition is over 80%? And does anybody know if after the change the series number or anything changes to show that the device has been modified?”

From what I know, yes they will change the battery at a cost and not really Apple has to approve of the services and be notified that the battery or changes being modified to the phone. The appointment is hours of work for the service tech to do his or her job. They will let you know best of luck !
