“If there is a timer, what is the maximum duration? Is it possible to override the timer to keep the oven on for longer periods of time if needed, and or to avoid having timer signal sound?”

• Hi Bakertobe, The Digital Countertop Oven w/Air Fry does feature a preset timer for each function that can be adjusted. The Dehydrate function will keep the unit on for 12 hours.
