“I see that the fan for convection shuts off occasionally. When running in the air fry mode it seems to shut off even more frequently than with convection is this normal? I would think air fry the fan would be running constantly.”

It is normal for the convection fan to operate periodically throughout a normal bake cycle in the oven. This is to ensure even baking results.
