“Before initial use, are there any steps needed or is it literally ‘plug n play’? Reason for asking is when we reheat something (be it a cup of coffee or a small bowl of ground beef) there is quite a bit of steam inside the microwave when we open it.”

I would simply set the time (after your initial plug in) and you will be ready. I don't think there's a 'burn in' time for this microwave!
