“Will this MB support a 3rd M.2 NVME using a PCIe adapter? I am trying to replace the 250gb boot drive with a 500gb and use my 1T M.2 as general storage.”

After digging through all the manuals front to back I finally found what i was looking for. Unfortunately if you using the 2 on board M.2 slots you lose access to the 3rd PCIe port which is the second PCIex16 that’s needed for the adapter to work. So in turn no you can not use 3 M.2 ssd’s with a PCIe adapter. It will work if you had an external adapter though.
