“I'd like to use this exclusively with an Apple TV (thus, all streaming & apps through Apple). If I do this, do I need to connect the TV itself to my wifi for any purpose? I don't want Roku or any of the apps through them.”

Hello Satori, Wifi is required to setup the TV once you set it up you can disconnect it from your internet if you'd like to.
