Water might be related to pressure in your residence OR your water filter might be too old. For the ice, you do not want to use a knife. Open the freezer door. To the left, you will see a large knob. That knob is driven by a motor in the body. If you rotate that knob by your hand, it should be fine. Also note that sometimes the design of that knob prevents the freezer door from closing. This is a bad design. I am not happy with this purchase at all. Just FYI.
