“If I don’t want to hook up the ice maker can I also remove the tray for more space? Or use the tray as another drawer? I’m concerned about it taking up a lot of room of wasted space and we don’t want to use it.”

If you don’t want or need the ice maker, do not connect the water line in back. Remover the ice tray, and flip the lever up for maximum space.
