“I am absolutely thrilled with this fridge!! Except for one thing....my fridge gets too cold, freezes my veggies in the veggie drawer. I adjusted the temp and it was a bit better but then the things in the fridge weren't very cold, can this be fixed?”

On each shelf of the freezer you will see a little rectangle opening. That is where the cold air comes out from. Make sure that on every shelf it is cleared - not covered. When you do that the fridge will not freeze your items.
