I just discovered this issue last night when i hooked up my sons PS5 to the monitor for the first time. I bought this monitor for my gaming pc but i wanted my son to try it out and unfortunately, PS5 does not support 1440 and so you wont be able to get 1440 @120hz.

The cable should be able to carry 4k 120 signal I am not a console user but it happened with my laptop which had hdmi and display ports and then hdmi was stuck at 60hz signal. So i ultimately had to bought 4k 120hz dp to dp cable. I dont think it would be a problem with ps5 though (a limited bandwidth hdmi port) but cable can be a culprit.
