Most (if not all) new gas stoves have a thermal sensor that (if not bypassed by holding in the knob) prevents gas from coming out unless it reaches a predetermined temperature. That is why when you turn it on you have to hold in the knob for a second or two. Holding in the knob allows the gas to flow even though the temperature sensor has not gotten hot enough. When you release the knob, if the fire is not lit and keeping the sensor hot the gas shuts off to that burner.
