“How do you turn off the ability of the TV to listen to conversations in the room? It either turns itself on to respond, or types out what someone just said, filling screen with that topic, interrupting the show. We don't want to be eavesdropped on!”

You can disable the voice assistant feature by going to: Settings > All Settings > General & Privacy > Voice > Bixby Voice Settings > Voice Response > Off. Then open Voice Wake-Up Settings and set to OFF. You can disable Alexa as well. ~ Samsung Specialist
