Because it has a feature that it reads your notifications to you while wearing them.

Because you can do calls just pressing your finger in one side, and saying "call X person", that's why

I'm not completely sure, however i am almost certain it needs permissions to anything that could access your speaker, like voice to text, which i am sure is offered in the apps you listed
