The device will be locked to the first company you go to. If you wish to switch you need to contact them to verify that the phone is not stolen, you owe money on it, or other restrictions, if all pass, they can unlock it again and you can go to any company you want.

As I understand unlocked phones, you can change providers at your discretion. So no, you are not locked into AT&T forever and ever.
