“This product says to be 3.0 channel, but also says Dolby 5.1, and there is a description for a built-in subwoofer. So is it 2.1 (total of 3) channels for a left and a right and a sub? or is it 3.0 for a left, center, and right, no sub? or 3.1?”

It is 3.0 Left, right, and center. You can add a sub (3.1) You can add rears and sub (5.1)
