Yes this panel offers 10-bit color. I attached a screenshot of what windows reads my G7 settings as.

I have this monitor and can confirm it supports 10-bit RGB with HDR. Looks amazing. HOWEVER, please note setting this in Displayport 1.4 limits you to 144Hz. You can find it in the NVIDIA control panel under Screen Resolution, towards the bottom.
