Yes you could. You just would not be able to use the auto back up/restore feature because everything would get mixed up. But you can definitely create a folder and separate them. I hope this helps.

The device can be used to "backup" specific data and photos, or used as "ad hoc" storage (within very narrow restrictions set by Apple). My answer is yes* to all three questions. The iXpand app allows you to select and save/restore individual photos to/from your device. The app allows you to add extra folders that are also accessible like normal on a computer and to make changes on a computer. * I'd add "within reason" here because overly complex folder names or structures aren't the intended use case.
