There is a setting in your phone to which you can choose to allow 5g . The plan itself is only offering it however not for ing it upon you. Under settings somewhere. You can choose to only use 3g/4g/LTE ONLY

You can always disable the 5G connection through your phone settings, I have mine disabled most of the time, I am using an iPhone 13 Pro, and any other 5G capable device will most likely have the same option.
