“Are the gray plastic screws supposed to stay on the front of the stainless door?”

• Those gray plastic screws cover the screw holes and are there for aesthetic purposes only. These screw holes are there to be used to move the handle should you want your door to open the opposite way. If you don't mind seeing the screw holes then you can leave the plastic screws out, but I would leave them in place.
