“Can the plastic/fiberglass hinge cover be removed, allowing for clearance under overhead cabinets? Many current fridge hinge covers adds 1-1.5" to the total, overall height. I don't think the hinge cover is necessary...just cosmetic. Correct?”

Yes, it can be removed. There appears to be just a Phillip screw that is holding that piece in place.
