I've made fries about 1/4" thick with olive oil, salt, pepper and topped with minced garlic after frying. Very tasty and can be a crispy as you want depending how long you leave in the fryer. I made one average size potato amount of fries in a couple batches at a time; put the first batch in warm oven waiting on the remainder.
