The variable temps do provide some differences in the waffles - from a lighter, moister waffle to a darker, crisper waffle. The light display indicating the waffle is done is helpful. The non-stick surface works, tho I have had issues with waffles sticking slightly to the top as I lift up the lid, but not a big deal. I would buy this again.
