Don't know why I waited so long

I've had it for about a month and it's fantastic. I bought it about a month ago around the same time I got into sourdough culture. It has been godsent in making any enriched bread. I made 5lbs of Babka recently, that I would not have been able to knead by hand. Adding butter is such a cleaner process now, but I'm still getting the hang of the settings. Kneading on just 2 for some doughs will have the mixer on for 20+ minutes.
