It also can char or burn your food. I found out the heating the grill to 200 to start works better.

The issue I had was the griddle has a grease catch all along the front of the griddle and there was a slight angle which would make liquids run down to the catch. When I made eggs or pancakes, it would run down into the catch. I had to put thin books or magazines under leggs to level it. I returned it because I didn't want to always do that. Did love the high temp sear option.
