Even on the lowest setting, the 4 burners just don't go low enough to get a slow simmer... Oddly enough, the oval center burner does not get a high enough flame and it takes 5+ minutes of preheat time for the supplied griddle to get hot enough for pancakes... Other than that, it's a very nice range...
