Now I am running windows on it from the Steamdeck MicroSD slot. Certainly not the best experience, but this card is about as fast as the Steamdeck can handle

They advertise 10MB/sec writes and that is optimistic. Get the Pro Plus instead; it costs a few bucks more but the writes aren't clown shoes like this one.

This model features up to 130MB/s transfer speeds. While there may be some variations in speed due to varying conditions, the speed you are getting with your card is unusually slow and may indicate some other issue.
